Not A Resolution: That Clean Life

If you follow me on Instagram, you’ll have seen an influx of healthy eats over the last week and a half. No, it’s not a resolution (really). It’s #ThatCleanLife!

Two years ago, Abigail released her first meal plans and I dutifully followed the #eatcleanin2014 challenge with some other Toronto-based ladies. It wasn’t as fancy as it is now: just some PDFs she and Chris had painstakingly put together and emailed out to all of us. But the food was good. Really good. The food photography was not.

Flash forward two years and my Instagram game is much stronger – and so are my clean eating skills. Hemp, chia and kale are frequent inhabitants of our pantry & fridge and I have an oft-annoying tendency to want to make everything from scratch.  

 

That said, I’ve alluded to the fact that Mike and I have both packed on the LBS since getting married in June. It’s hard not to when you’re living together for the first time and realize you can hibernate with your forever bestie and never really have to leave. Except for food. Which, let’s face it, varies in healthfulness when you’re living with a guy and have zero willpower. I could live off burgers, popcorn and truffle fries.

Over the last week and a half, we’ve been adhering to That Clean Life’s 21-Day Transformation Challenge but have been finding ways to make it work for us and our lifestyle – the true way to succeed with any change, in my opinion. I’ve found it’s a lot easier to cajole Mike into joining me in this pulse-ridden and red meat-free challenge if I make allowances on the weekend. Last weekend that meant going off the rails for dinner but sticking to breakfast & lunch.  

This time around, there’s also a special Insider Group for the challenge on Facebook. This is normally *not * my idea of a good time (rich coming from a social media person, I know), but I absolutely love sharing this experience with the group. Everyone shares snaps of their meals, modifications and keeps one another accountable without ever talking about being accountable. Oh, and Abigail and her team chime in to answer questions and participate. So great.

Along the way, I’ve dropped a couple of pounds and have also been wholly impressed with how little food we’ve wasted. Seriously: you will use up everything you purchase and it’s magical and doesn’t require you to make any toss-it-all-in-the-pot soups. Have I mentioned the food is incredible? Because it is. Even Mike has been gobbling up his meals (aside from ones that involve sweet potatoes & corn off the cob. Apparently these are no-fly zones for the guy I’ve been with for 5 years now. Who knew!).

Seeing that it’s the International Year of Pulses – chickpeas, lentils, etc (yes, really) – here is one of my favourite That Clean Life recipes that is perfect to make on a Sunday then enjoy for the rest of the week. It’s stupid simple and also stupid delicious. You heard it here first.

That Clean Life’s
Chickpea, Avocado & Feta Salad

(Serves 4)

Recipe That Clean Life Avocado Chickpea Feta Salad
INGREDIENTS

  • 1 can Chickpeas (drained and rinsed)
  • 1/2 Cucumber (diced)
  • Green Onion (chopped)
  • 1/4 cup Parsley (chopped)
  • Lime (juiced)
  • 1/4 cup Feta Cheese (crumbled)
  • 1/2 tbsp Extra Virgin Olive Oil
  • Sea Salt & Black Pepper (to taste)
  • Avocado (diced)

Combine all ingredients except avocado together in a large mixing bowl. Mix well with a spatula. Top with avocado when ready to serve. Enjoy!
Editor’s Note: I leave out the parsley but add in extra cucumber to stretch the salad a bit further. When serving, I also add a sprinkle of Maldon salt for extra crunch!
