Paleo Chocolate Pudding Recipe

I’m quickly learning that the secret to surviving paleo is to find substitutes for delicious things. One recipe I saw again and again was this pale0-friendly vegan chocolate avocado pudding. I was skeptical, but I braved the chilly temps and took a trip to the grocery store last night to make this happen. Spoiler: it was amazing, rich and filling.

Paleo Chocolate Avocado Pudding

You’ll need:

  • 1 ripe avocado
  • 1/4 cup of pure, unsweetened cocoa powder
  • 1/4 cup of liquid sweetener (I used 100% maple syrup)
  • 1/4 – 1/2 cup of coconut milk (light works!)
  • 1 tbsp of pure vanilla extract

It’s pretty simple: just combine all ingredients in a blender and mix until smooth. You may have to add some more coconut milk if your mixture is too thick or a little extra sweetener if you’re finding it too bitter. This is great right out of the blender, but it tastes even better after it’s been in the freezer for half an hour or so. It has a mousse-like texture and is chock full of nutrients. You can’t really taste the avocado, although the pudding has some earthiness to it.

I had a three tablespoon serving with a couple of pomegranate arils (fun fact: they’re not called seeds! I just learned this recently) for some crunch, colour + sweetness and couldn’t have had another bite. Bonus: this means lots of leftovers for tonight!
